Wild Edible Weekend with Zaac Chaves

Join us on this magical weekend picking wild edibles and bringing them back to the lodge to have our chef turn them into a culinary experience.  Then enjoy a meaningful yoga class and relax on the property.  You will learn about the way nature opens itself to you and how you can find utility and beauty in the things you didn’t even realize were around you –  all while finding serenity and peace within, through light meditations and yoga classes (and of course the hot tub!).  It is a time of enlightenment and transformation.  Come with an open mind and endless curiosity for a fun, exploration and rejuvenation weekend.

ITINERARY

  • Leave NYC Friday morning, Sept, 29th in Brampton’s caravans (or drive yourself)
  • Friday night Yoga then dinner and campfire.
  • Saturday, sunrise yoga, breakfast then heading out to the forest in search of wild mushrooms & other edibles. Late noon, we break for a fantastic bag lunch (NOT like your Mom used to make…) and then continue hunting.
  • Free time and snack at the lodge
  • Saturday sunset yoga then dinner
  • Sunday sunrise yoga, breakfast then extra activity before departing to NYC.
  • Optional stop at Woodstock Farm Sanctuary

Zaac Chaves

Often sought out for field expertise regarding fungi, Zaac Chaves guides individuals through realms in which the littl details matter immensely. Zaac’s skills are routinely requested by both Harvard University and the New York Botanical Gardens for rare and disappearing species’ surveys. 
Often sought out for field expertise regarding fungi, Zaac Chaves explores frontiers in which details matter immensely. Zaac’s expertise occasionally serves at the behest of major conservation institutions(ie. New York Botanical Gardens, Harvard University, National Park Service) for rare and disappearing species’ surveys. They serve others too: first through ninth grade teachers and children, hardscrabble farmers, and devoted herbalists. 
Along jaunts, Zaac carries a plethora of cunning techniques gleaned from some extraordinary places. Zaac has been honored by the Explorer’s Club regarding his Transtaïga bicycle journey through the aboriginal homelands of the northern Cree people. On any tour with Zaac you may learn bits about primitive pyrotechnics, professional-grade documentation with obsolete (ie inexpensive) digital cameras, and effectively foraging for delicious treats. 
Zaac has a wealth of knowledge and is an entertaining and fun guide to be around.

 

Derek Pashupa Goodwin has been teaching Jivamukti Yoga since 2011, and is known for his playful energy and creative sequencing. He will lead the Saturday morning yoga class with a vinyasa sequence with stories of mycelium and the interconnectivity of trees and fungi. 

Siewli Stark is a yoga teacher and a movement educator. She is deeply passionate about bringing the teachings of yoga and mindfulness to people of all abilities. She is also certified with Yoga Tune Up. Siewli will lead classes on Friday evening and Sunday morning that combine gentle vinyasa flow with self-massage and alignment-based movement.

Derek and Siewli are also AcroYogis, and will weave some partner yoga fun into the retreat. Derek is a professional photographer, specializing in yoga photography. For those interested Derek and Siewli will set up some photo shoots in the woods building geometric shapes with bodies that blend into the landscape. Optional, but guaranteed to be fun!

Chef Pas is a Thai Native who moved to New York City in 1992. After finishing an MFA at Pratt Institute, his love for New York and its food got the best of him.  That inspiration ignited a fire in his love for cooking food and creating memorable experiences that started with a weekly brunch for his friends that grew and grew…

He ate everything from every buzzed-about restaurant. He gained weight and got sick before he realized the expression, “you are what you eat,” was actually true.  He then adopted a plant-based diet and learned the skills to cook hearty vegan meals.  

Pas brings a passion and creativity to create engaging, memorable events surrounding food.  He is always learning and experimenting in the kitchen and as such his skills continue to evolve and stay fresh.  He champions plant-based local businesses by providing a platform for them to reach new audiences. His approach is to have fun with food and bring joy & comfort using local ingredients in his dishes.
